This is a relatively new hotel. The owner is German and is said to spend several months each year at the hotel. The old mill building has been extensively restored and remodeled. The basement, which is a restaurant, resembles a beer keller. Upstairs there are two floors of rooms. The furniture is functional, my bed was comfortable, and the bathroom worked. The evening meal in the restaurant was solid Georgian food. However, the breakfast buffet left much to be desired. The hotel has a pleasant view to the south. Overall, a pleasant surprise.

Pleasant surprise in remote town

This is a good (somewhat upmarket) place to stay at when you are in the area (or for a short trip from Tbilisi) - and there are interesting sights to visit nearby. The building is beautifully restored/renovated; the quality of the workmanship and the material used is very high. This obviously comes with a price-tag - but I feel that 190 lari (including breakfast) is on the whole justified. There is satellite TV, including some German channels (ARD, ZDF, etc.). There is a small restaurant one floor down from reception, where we also had dinner. Portions were *huge* - one dish (with a salad as a side dish) is enough for two people! The portion of bread alone could have fed half a family. The house-wine (at 12 lari for a whole litre!) was excellent. 
One person at the hotel spoke very good German; communication with everybody else was severely limited. Staff in the restaurant speak Russian, but virtually no German/English.
There are also some minor issues to report. First of all, there are no curtains in the room. So there's no way to keep the room dark in the morning. Secondly, it was slightly odd to receive a phone call from reception at 18:30, asking us to place the order for our dinner because the cooks wanted to go home. On the one hand, I fully understand - but still... Finally, we had specifically chosen not to book one of the four remaining rooms via booking.com in order to avoid charges for the hotel - and we were also hoping that this would be reflected in a discounted room rate. Judging from our experience, this seems to be the norm in Georgia during the low season; in one hotel in Batumi, we were even offered a discount on turning up at reception before we asked! Not so at the "Deutsche Mühle". Even though I specifically suggested that they could pass on some of the money we had saved them, I was given a bill of 190 lari. As I said above, the room was worth it, but I still feel this wasn't done quite the way it should have been...
Oh, and if you are travelling to Bolnisi from the west (e.g. Akhaltsikhe, Ninotsminda), please note that the road from Tsalka is in a bad state. We knew this before we took it, and didn't mind very much because we had a decent 4WD - but I wouldn't recommend it with a regular car. Finally, I strongly recommend against letting Google maps guide you to take the road from Dagheti to Bolnisi - it's taking you through a canyon and involves steep ascents on one of the worst "roads" I have ever driven.

Pleasant little guesthouse/hotel, renovated to a high standard - some minor issues

This small hotel is beautifully situated along side the river.  However, our room was definitely not desirable.   It was small and the window opened onto the only porch where people can gather to chat.   The glasses used by those enjoying the porch one evening were still there in the morning.

Lovely location

We were really looking forward to this experience but were really disappointed staying here. 

The staff really let this place down. We were greeted by a lady at reception, with long black hair. She was abrupt, blunt and unfriendly. It was clear that we wouldn't be able to use the bar or restaurant when we arrived at 7.30pm, as they were shut and all the lights off. After she checked us in, the lady disappeared. We were not asked if we were hungry, or would like a drink. 

Breakfast is served at 9am, whether you like it or not. We were disappointed with the offerings. Scrambled eggs and warm bread were lovely, but the offering of very poor quality processed hot dog sausages and some meat slices was surprising given the price of the hotel. We were made to feel really unwelcome at breakfast. The same lady who had checked us in was serving, and we felt really uncomfortable and almost like she was annoyed or in a bad mood. She was so unapproachable we didn't even feel comfortable asking her to clarify the yogurt/sour cream offerings.

The hotel itself is a beautifully restored property by the river. Its quiet and you can hear the birds. It's located just a few metres from Bolnisi Old German Town, and near The Brothers' Cellar, which is a fabulous tiny vineyard, family run that also has lovely food if you visit as part of a tour.

The AC in the hotel didn't work, and the rooms are very hot in summer. They only have very small windows and no curtains, meaning the rooms are quite light at night, and there is little air flow. It was too hot for us to sleep, and it took us until around 2am to finally sleep. The pillows, although always a personal preference, were unusable for us, and we ended up using our own jumpers to sleep on. 

This was our first night of our honeymoon, and we were disappointed. We wouldn't recommend unless there were staff changes. A smile and a good morning go a long way.  

Rude staff. Disappointing breakfast.

The place is very nice, unfortunately the staff and owners were horrendous. We felt like uninvited guests in their home. Not even basic english words spoken, their kids yelling all day in front of my room, 30min to do the check-out, breakfast starting only 9am, dinner closed at 8pm and lots more in just a 1night stay. Worst experience in our Georgian-Armenian trip.
